Rich, bold, yet finessed with fruit and full of life, The Roshi embodies Paradise Springs's journey from east to west. The Roshi is a full-bodied wine composed of four of the five noble Bordeaux varieties. It has a robust tannic structure and an underlying acidity allowing it to be age worthy. On the nose dark fruits like brambleberry stand out, followed by a spicy cedar note. On the plate those same dark fruits translate to a fruit-forward wine with rich tannins and balanced acidity, which help make this wine a great match with food.
This richly colored wine boasts a pale purple hue and opaque dense body. On the nose a symphony of blue fruits; blueberry, mulberry, and blackberries, then baking spices take over, reminiscent of my childhood favorite blackberry pie. On the pallet, it is blackberry pie! Moderate tannins soon creep in and provide structure. Balanced with fresh acidity its long lasting finish will keep you wanting for more. The child inside me smiles.
Happy Canyon is known for its afternoon sunshine that provides excellent heat for the thick skinned cabernet sauvignon grape. Surrounded by loam, clay loam, red and yellow chert, and serpentine cobbles, the vines produce a luxurious fruit with brilliant color and aromatic red fruits.
