One of the oldest varieties from the Languedoc region of France,  Picpoul Blanc exudes mouthwatering acidity and freshness.  Produced locally at the Nolan Vineyard in the Alisos Canyon AVA. Picpoul means "lip stinger" which you will immediately understand with your first sip. Its zesty brightness pulls you in and leads to notes of citrus, white peach,  lychee, and hints of limestone. The lengthy midpalate lingers to a snappy finish leaving you wanting for more. This wine is perfect for a hot summer day and will complement any Santa Barbara shellfish dish, particularly oysters.

A clear golden color with greenish hue leads the way to aromas of a variety of stone fruit and white flowers. On the palate, citrus notes standout with some minerality in the background, then a creamy mid-palate gives way to a crisp finish.

Complex fruit aromas along with toast and vanilla notes are highlighted on the nose. On the palate lemon curd comes through followed by a creaminess and a long, crisp finish. This Chardonnay is well balanced on the palate with good acidity and soft tannins that highlights the fruit and roundness of the mouthfeel.

This is a very pale colored rosé with aromas of watermelon and strawberries, leading to a touch of minerality. This dry and crisp rosé has plenty of acidity, making it a refreshing, food friendly wine.

Our Pink Ash Sparkling Rosé is a Brut, made traditionally Méthode Champenoise and is composed of 60% Pinot Noir and 40% Chardonnay. It is fresh, crisp and fruit-forward with a bright finish.

This Pinot leads with a meaty and earthy aroma, followed by subtle hints of vanilla and spice. On the palate, the wine shows the same components of earthiness and spice as well as sour cherry and floral flavors which add to its complexity. This wine is approachable in youth but will age well thanks to its well-balanced tannins and acidity.

The wine has a deep garnet color and is strong with earthy aromas of mushroom, tart fruits like blueberry, and subtle toasty notes. On the palate the wine has a bright acidity followed by a firm mid-palate with candied fruit flavors, and ends with a touch of cocoa powder.

This Pinot Noir comes from the Sanford and Benedict Vineyard, straight from the Founder's Block of vines. It was produced from the single block, estate-grown, original rooted plantings of Pinot Noir from 1971. This bright Pinot delivers a silky palate and earthy red fruits like figs, which are framed nicely by balanced acidity and supple tannins.

This densely colored wine has aromas of blackberries accompanied by subtle floral notes and baking spice. Blueberry and blackberry notes standout on the palate in this full-bodied and very complex wine. The 2019 Petit Verdot is age-worthy due to the length of the grippy tannins across the entire palate and good acidity.

One of the great noble grapes of Bordeaux that thrives in the Happy Canyon region in Santa Barbara county. Low in alcohol at 12.5% this wonderfully aromatic wine  emulates notes of  red  fruits and a tomato garden. On the pallet is symphony of bing cherry, red currant, raspberry and baking spices with wonderfully balanced acidity that will battle any well marbled steak you introduce to it. The tannins are present but not overwhelming, lending a soft cage for the red fruits to come screaming off the finish.

The F’ing Merlot is a full-bodied wine composed of three of the five noble Bordeaux varieties. Merlot takes center stage while small percentages of Petit Verdot and Cabernet Sauvignon were added to give some complexity. Bright red fruits and toasty oak flavors dominate this wine, and abundant but subtle tannins give a great mouthfeel that comes together on the finish.

Santa Ynez Valley

60% Grenache, 20% Syrah, 20% Mourvèdre

Inspired by the Grenache-Syrah-Mourvedre blends of France’s Southern Rhone region, our first ever GSM blend melds these three varieties to create an artistic expression of the Central Coast. The wine begins with spicy aromas and bright red fruit notes with cranberry and bing cherry. This Rhońe blend provides a rounded mouth feel and subtle acidity, leaving the palate with a hint of black pepper and a soft tobacco finish.

47% Petit Verdot, 20% Cabernet Sauvignon, 19% Cabernet Franc, 14% Merlot

Aged 2 years in French Oak, this Bordeaux Blend from Happy Canyon is built to stand the test of time. Rich, bold, yet finessed with fruit and full of life, The Roshi embodies Paradise Springs's journey from east to west. The Roshi is a full-bodied wine composed of four of the five noble Bordeaux varieties. It has a  robust tannic structure and an underlying acidity allowing it to be age worthy. On the nose dark fruits like brambleberry stand out, followed by a spicy cedar note. On the plate those same dark fruits translate to a fruit-forward wine with rich tannins and balanced acidity, which help make this wine a great match with food.
